We’ve opened our Obsessed Lab at Howth Castle, the new home of all things food and beverage. It’s where our chefs, baristas, and nutritionists come together to learn, teach, and create. A space built for curiosity and collaboration, its already fuelling fresh ideas, bold flavours, and new ways to push Irish hospitality forward. Because when it comes to food, we’ve never just been passionate, we’ve always been obsessed.

These growers, makers, fishers, and bakers are more than suppliers they’re partners, friends, and the flavour force behind our menus. We work with families who’ve spent generations perfecting their craft, because great food starts with great people. By championing local produce, we keep flavours fresh, support Irish communities, and protect the planet one plate at a time.
From Field to Fork – Our Fruit & Veg Heroes
From strawberries to heritage potatoes, our veg comes from the best hands in Ireland. The Keelings family grows strawberries that taste like summer, Denis Harford’s fields deliver cauliflower, broccoli, leeks, and spinach, and Mark Archer’s baby gem lettuce has been in the family for three generations. Iona Farm’s Donnellys supply beets, carrots, wild garlic, apples, cherries, and baby veg, while Kerrigan’s Mushrooms in Meath brings loose, organic, and exotic varieties. O’Shea Farms in Kilkenny delivers carrots and potatoes from an 1830 family farm, Ballymakenny Potatoes in Louth keeps heritage varieties alive, and Enda Weldon’s family has been growing sprouts for over 40 years!
The Best of Irish Waters, Dairy & Grains
Our fish comes fresh from Kish Fish in Howth, a Dublin family business known for quality and sustainability since 1966. From Cork, the Lynch family at Macroom Cheese brought Ireland’s first water buffalo herd to our shores in 2009, producing award winning mozzarella. Killowen Farm in Wexford makes yoghurts the traditional way, perfected over nine generations.
For flour, we work with McNeills in Belfast, milling since 1867 to bake bread in-house. We’ve invested in training our own bakers and running our own Pastry Academy, because nothing beats the smell of bread fresh from our ovens or the pride of crafting desserts from scratch.
